Bravo TV announced today that Fabio Viviani, owner and Executive Chef of Café Firenze in Moorpark, CA will be a contestant on the highly rated reality show Top Chef's 5th season, which starts shortly. Fabio is the Owner and Executive Chef of Café Firenze Italian Restaurant and Martini Bar, one of the most recognized restaurants in Ventura County. Born and raised in Florence, Italy, he has traveled across Europe and is trained in classic Italian and Mediterranean cuisine. He incorporates Italian, French and Spanish influences in his dishes and believes that cooking is a craft. He is currently working on opening the Firenze4Kids Foundation , which will emphasize the promotion of health and wellness for kids through good nutrition and will also launch kidshealthcafe.com, the largest informative resource library available online, designed to enhance a healthy and safe lifestyle for children. Additionally, Fabio also works as William Shatner's private chef. Fabio Viviani , who received his degree from the prestigious Instituto Professionale per I Servizi Alberghierei in Florence, Italy, opened Café Firenze at 563 West Los Angeles Street, Moorpark, CA 93021 in November of 2007with tremendous success and acclaim from restaurant reviewers. Each episode holds two challenges for the chefs. The first is a Quickfire test of their basic abilities, and the second is a more involved Elimination Challenge designed to test the versatility and inventiveness of the chefs as they take on unique culinary trials, such as working with unusual and exotic foods or catering for a range of demanding clients. The challenges not only test their skills in the kitchen, but also reveal whether they have the customer service, management and teamwork abilities required of a Top Chef. The competing chefs live and breathe the high-pressure lifestyle that comes with being a master chef, and each week someone is asked to pack their knives and go home.
